Tequila Lime Chicken Burgers

One of the few menu struggles we have in our household is the age old "chicken vs beef" question.  I would be very happy having chicken as a basis for the vast majority of my meals, but my Beloved, not so much.  He is definitely from the meat and potatoes era and is pleased as punch to be there.  Fortunately he is a good sport and will eat chicken, but since I know it’s not a favorite I try not to overload the week with poultry.

When I first saw this recipe on two different blogs it intrigued me.  The spices and such sounded like something we’d enjoy, but any time I mess with a "burger" it is not a success with him.  I finally decided to give it a try and am so glad I did.  While cooking, the scent of cilantro and spices were mouthwatering.  Then with that first taste we agreed that this is a definitely a keeper recipe.

Because the two recipes I found had slight differences I used what I thought would be our preferences from each.  I’ve put the links for both as they were my inspiration and you might want to see their recipes as well.  Definitely do not try doing these on the grill as the patties are very moist and I imagine they would fall right through the grates.  As we were eating though we did think that these would do well on the George Foreman grill if you’d rather not heat up a kitchen with the broiler.

Tequila Lime Chicken

TEQUILA LIME CHICKEN BURGER

Cara’s Cravings and Annie’s Eats

1 pound ground chicken
2 t garlic salt
1/4 cup fresh cilantro, roughly chopped
2 t fresh jalapeno pepper, seeded and chopped
zest of 1/2 lime
squirt of lime juice
dash of soy sauce
1 oz tequila
1/4 cup oatmeal
fresh ground salt and pepper

Preheat broiler – line baking sheet with aluminum foil and spray with non-stick baking spray.  Combine all ingredients in a bowl and mix with hands.  Form the mixture into three balls, set on baking sheet and flatten with your palm.  Broil the burgers for 13-18 minutes.

While burgers are broiling, sautee onions and peppers in butter.

Serve on buns with the sauteed pepper and onion mixture and lettuce.
